The answer is very simple: either get to know the vendors you're buying from well enough to trust them that anything they're charging a premium for is legit (whether that's merely the fact that they grew it or facts about how they grew it...) or don't pay a premium price and there won't be an incentive for anyone to mislead you for the sake of a premium price. And besides, all the inspectors in the world aren't going to successfully prevent most of the exploitation of consumers that are so detached from and clueless about where their food comes from that they can't tell the difference between what's grown by a vendor and his family or a vendor on his own farm mainly by dozens of migrant workers or a vendor that's growing a little and mostly re-selling or a vendor that isn't growing anything at all. If you can't grow it yourself, don't push for inspectors (government or otherwise), but get to know your farmers yourself. Those are the kind of customers real farmers would most like to have anyway.
