I didn't realize there were more replies to my question, sorry :) When I saw you said tacos, I had a few questions but didn't want to pester you so I just left it. I'm surprised you don't consider tacos healthy enough to eat regularly, but I know we're all different and have different health. I lived in Mexico so I've heard of a lot of things, not that I've tried many of them, though, and the last thing you mentioned, Tasajo, I hadn't heard of. I don't know much about Oaxacan food. I did visit the city of Oaxaca once a few decades ago. I loved the chocolate shops, a friend and I bought a little bag of warm chocolate and ate it with little spoons in Monte Alban. I hope to go back one day with my husband.

I wonder if there's any thought given to all the cooking over fire, and smokey flavored food, that it's bad for the cook's lungs. My suegra in another part of Mexico has COPD and she often cooked over an open fire, as well as burned trash and yard waste. I love how they fed their trainers at the end, that shows respect.

I like his enthusiasm and dedication, but his energy makes me nervous. I think it was making the chocolate queen Reyna nervous, too. I'm only a few minutes into the video though. (yep, she suggested he slow down and enjoy the process :)

I caught that too. Maybe it depends on something, like when the ask what is the tallest mountain. It depends how they measure, where they measure from, etc.
