When rice goes bad, it goes really bad. I married a white girl, but when I lived with my family, I never saw rice go bad bc we ate it all very quickly. We can leave it out and it's fine, but you have to eat it fairly quickly. If it's been more than 12 hours, stick your finger in the bottom of the rice. If it is even the slightest bit slimy, throw it out. Don't take a chance on it. I also suspect that there is some natural tolerance that we build up to the bacteria that does grow. When eating something with rice that you didn't cook, rice pudding is dangerous bc you can't tell if it was slimy. Frying slimy old rice can't cover up the flavor or slime, so you'll know it isn't good.

I'm Filipino. My mother and I leave food on the counter for days. I think one thing that makes this possible is that all of the food is, essentially, preserved in some way. It is either extremely salty, sweet, sour, or overcooked. That's just how it comes. All of these reduce microbial growth.

I am also not a fan of rice in the refrigerator.
