  1. Adam, at 12:52 you show measuring out King Arthur flour at 5 cups = 500g, when the King Arthur website values 1 cup at 120g. With that amount of discrepancy, you would be a full cup off of your target quantity and that would make a big difference in your result. I think your opening statement sums up the problem quite succinctly, but I appreciate your parsing the question so thoroughly.
