  1. Good points, Adam. It isn't that hard to make good corn tortillas from masa harina (I like Bob's Red Mill brand--no GMO corn), and they don't need to be perfectly shaped and you don't need a tortilla press either. Take 2 cups of masa, 1.5 cups of water, mix well and let hydrate for an hour, scoop out a ball of dough and press between 2 sheets of parchment or waxed paper with a stiff spatula or flat bottomed pan, and slap it on a comal or griddle or cast iron skillet and cook for about a minute on each side.
