  1. I have watched every single one of Chef John's videos on his channel and made at least half of the recipes. He deserves the credit and accolades, as his instruction is clear, concise, clever, and often comedic. When I do my demi glace (I have done it 3 times) I don't have bad smells, perhaps because I do use veal bones. The result is REALLY worth the effort. Thanks, Adam, to paying respect to Chef John Mitzewich.
