For the last couple of years I've been making cultured mozzarella (shout out to Gavin Webber's cheese making channel) for my pizzas and it has a great flavor and satisfying stretch, and the Margherita style is my favorite, by far. I think I noticed that you put down a light dusting of Parmigiana on at least one of the pizzas, and that is a good move to boost umami.
