  1. It is interesting that you did not discuss pH when it comes to bagels as one would normally consider boiling in a very basic solution to gelatinize the starch on the outside of the bagel. Perhaps you thought it was an unnecessary complication and it didn't warrant consideration for a marginal gain, or you thought we couldn't handle or appreciate the the sophistication and nuance that such methods could contribute. Your audience is not comprised only of 15 year old boys.
