  1. Hi, Adam! I can vouch for this method for fries, as it is how I've been doing them this way for years. What I've learned is that you need only to coat the fries in oil before putting them in an oven and they cook much faster in a sheet tray or on a rack over the sheet tray. The lower rim helps the hat air circulate around them better and mine are done in 30-40 minutes (note: more potatoes means more time in the oven). Good work, and your steady improvements in production ARE noticeable.
