  1. That came to me as well, and it isn't some esoteric overly complicated concept, just a simple technique to improve your cooking. If you are watching cooking shows, presumably it is because you want to be a better cook, so tips like Kenji's are very useful.

  2. I remember when Andrew "Babish" Rae came out with his cookware line and my first thought was that this was his "jump the shark" moment. Sure enough, it was and his vids got increasingly ridiculous and useless. Let's hope the same fate does not befall Adam.
