  1. I just remove the breasts, legs, wings etc. Sear the skin then season and bag for sous vide. Best god damned turkey I've ever had. Moist as all hell. Plus the carcass that's left gets boiled with mirepoix and a little bit of salt into a stock perfect for gravy.
