Philippines is the oddball of Asia. While most of East and Southeast Asia is Buddhist, the Philippines is Catholic because of Spanish colonization. Most names are of Hispanic origin and Tagalog is a creole language mixing Hindi, Spanish, Arabic, Chinese, and Aeta. Race mixing has been so ingrained into the population, unlike other parts of Asia where ethnic purity is held in high regard.
So, I don't think it is fair to say that Filipinos are a good representation of Asians in general. As you point out, Japanese, Korean, Chinese, Thai, Cambodians, Vietnamese, Laotians, and Burmese all have distinct cultures, with Chinese have numerous subgroupings such as Hakka, Tanka, Min, Cantonese, Sichuan, and Techu.
