John, watch out for saltpeter, potassium nitrate, here's the toxicity write-up:
/SIGNS AND SYMPTOMS/ After ingestion of potassium nitrate gastro-enteritis, with severe abdominal pain, vomiting, vertigo, muscular weakness, irregular pulse, cyanosis, convulsions, and collapse may occur. The toxic dose varies greatly; from 15 to 30 g may prove fatal but much larger doses have been taken without serious effects.

It causes kidney and liver damage and methalyzes your hemoglobin so you don't get enough oxygen. Well waters that have KNO3 runoff from fertilizer have killed infants outright.
