Like he said "Jiu" is his grandfather's original spelling in English but some inbred moron at "immigration" probably decided to have some fun with old men Jiu when he came over as a young boy. In Mandarin it is spelled as "Zhou". This is due to slightly different pronunciations between different dialects in China, but the Chinese character itself is one universally.

There's a difference between your typical suburban neighborhood cookie cutter franchise eateries vs. something that's prepared by a chef who really cares about quality and how his customer will experience that. For example, too much soy sauce on the sushi, or dip it rice side down first, it will ruin the taste, then all that hard work goes to waste because all you taste is soy sauce.
