A "person" is just a story you've come to believe, but there is nothing unique to humanity which makes them "exempt from being eaten". There are "persons" who (for whatever reason) are less intelligent than the average Dolphin, Pig, Cow, Dog, etc., taking that logic a bit further, from your POV, it would be moral to eat the mentally handicapped person. Intelligence is a bad metric to use. It's not about how intelligent something is. It's about whether it has a mind, and can suffer degraded states of existence.
