  19. I love sushi, all kinds, and always see either Escolar or White Tuna on the menu believing based on experience that it is one in the same. Albacore (the fish actually referred to white tuna) is also on the menu with Escolar. Escolar is bright white like snow. Albacore is white with a pinkish hue. If you see both White Tuna AND Albacore on the menu, you can assume that the former is Escolar and the latter is the tuna. I get the frustration with mislabeling. It's the same with crab or crab legs, which I avoid because it's most likely surimi. Yuck. I have no problem with Escolar and enjoy it. Thanks for the brief. You have a really tough job checking out all these yummy restaurants.
