All nations evolve over time. The France of today is not the same state as it was in the early Middle Ages. Doesn’t make it any less France. The Byzantine empire was the Roman Empire. The people considered themselves Roman’s, they used Roman laws and the government was directly descended from the Roman Empire of Augustus. That is very different from the examples like the Chinese and Persian empires you gave.

Modern agriculture has ensured that the western world hasn’t suffered famine in over a century. It’s low scale rudimentary agriculture that is most vulnerable to famine on a societal scale.

It’s nowhere near false at all. Industrial farming is what feeds billions of people. Those small scale farms may provide more produce when scaled for comparison, but those small farm are only ever able to support basically the people that grows the food. That and industrial fishing. For industrial agriculture to truly be a waste of calories as you say it is human society would’ve collapse back in the 1800’s.
