  2. Hard to say, I would think about it more in terms of function than taste or look-- egg is a binder in the cookie, if Bob's vegan egg does that then you should be fine. If not, I would try nagaimo (Japanese mountain yam, most medium/large Chinese grocery will have it) it is a yam that turns into a goop when grated, similar to beaten eggs. Not sure about butter, but any oil would probably work too. Coconut or anyone that is solid at room temperature is probably best
