Everything looks delicious 😋 Still working at 91 and he loves what he does! His advice is sound wisdom. I love the fact that he is surrounded by family and gets to work side by side with loved ones. Apple pies sell out by noon even located in the countryside, that's how you know you are getting a quality treat - highly coveted by loyal customers! 😊

I don't know why this video impacted me as much as it did, but there is something so amazing about the approach this guy has taken to his restaurant and it just feels me with pride and joy.

This is only one of the eight million reasons why I crave returning to Japan. Hard, honest work, devotion, humility, ingenuity, resourcefulness...the list of glowing virtues is indeed long. And then there is The FOOD Itself, not to mention the convivial atmosphere surrounding these "yatai," even among "strangers."

The man has excellent knife skills. It is one thing to be able to replicate a master but only those with a keen eye can see the subtle differences. No doubt in my mind has this guy processed 10 thousand plus eels at the master level.. from @2:11 to @2:13 he makes two cuts in less than a second... On the gut of the eel. I gave that time line for viewers to capture it. He is also an expert knife sharpener. @2:42 to 2:43 you can see the consistent knife strokes on the stone. Also from @2:44 till @2:51 he is sharpening a fine point on the secondary tip. You can also see that on the stone between those two time points. (It is darker) Again if you go back in time and pause at @2:40 if you look at the actual metal that first touches the eel. You can clearly see that it is shinier and although uneven has a focus point towards the top of the knife. (in the most middle part of the screen) That kind of sharpening is meant for longer strokes such as the eels spine/fillets. Where he uses the "body" of the knife to make his clean cuts.. If you have ever actually sharpened a knife on a stone you know to get that kind of razor edge with the strokes of @2:44 to @2:46 at that speed AND ANGLE is not an easy accomplishment. That handling of a knife also translates to his ability to skewer the eel with skewers (at speed) from @2:55 The Japanese are amazing. and literally pushed the US to drop TWO nukes on them before surrendering... From @247 to @2:51 the way he angles and handles the blade is proof of his skill and experience.
