3:25 “elevated basics”. Never heard of it but I love it! As American American, I’m seeing Mexican food in the US going through “elevated basics”. Not all tacos or Mexican food needs to be low cost even if it’s good. There is so much more than Mexican food can be when someone does “evaded basics”. In Mexico you see it all — basics, elevated basics, fancy, modern, etc. but US historically was dominated by basics in Mexican food industry

2:53 cold brew coffee is the only way I truly like coffee that isn’t full of cream and sugar. It has a much smoother taste and less acidic than regular coffee

At a korean BBQ place I frequented until I moved, they would take left over side veggies and sauces and put them on the grill with rice and kimchi. This method of stir fry rice produced a 'burnt' crispy fried rice that was addicting!! Not sure why I never thought about just doing this at home.

@jonathanlochridge9462 I usually have corn bread from stores (fresh made) and restaurants, rarely dry. But when people make, yes, it's often dry! I never buy the pre made cornbread, only made onsite. A quick google search shows it's often dry if people over bake it or use the wrong flour.

@jonathanlochridge9462 Whole foods and local grocery chain have bakeries and sell house made cornbread. Moist and delicious. I usually don't order it a restaurant and have only had it twice, both good. I did buy cornbread at a cheaper bakery once and it was DRY!

Great argument about the Type of music dominant at a given time is influenced heavily by the dominant listening context of that time. I can say that as I listen to older music, my opinions of songs have changed as I’ve listened far more frequently with earbuds / headphones than through a speaker. One of the biggest changes for me is how much more I appreciate GREAT vocalist / singing. I’ve become a much bigger fan of Celine Dion and Andrea Bocelli because you can really pickup and feel the vibrato and other great elements of their singing that don’t pop as much on a speaker And I think hip hop with strong bass became popular in the late 90’s and after in part due to people listening more and more frequently with headphones

While you ran your study in sauce sticking to pasta, the more often discussed matter is how the pasta water of Bronze cut makes for a starchier thicker sauce. That’s one the biggest selling points of bronze cut that you only mentioned as a side note. You might be a better to do that topic though it’s already common knowledge. But showing science behind it would be unique. Measuring how much more starch and if you can taste the difference in the sauce using bronze cut vs regular cut pasta water.

@chadmann2724 are you referring to the taste of Milk or how your stomach handles it? I can’t drink milk when it’s near the expectation date because if starts smelling funny and i get flashbacks to when I was a kid and drank some spoiled milk. But I haven’t noticed if my stomach is bothered more by milk near an expiration date.

@chadmann2724 Interesting. I'm going to see if I feel any different between drinking milk that's at least 1 week away from expiration vs milk near or just past it. My symptoms are mild though and erratic. Some days I feel it (4-5 bowel movements in a day and not very solid but no pain) and some days it's normal (2 movements, solid). I should really try to compare the type of milk I buy and the expiration date to see if there is a pattern.

4:26 I love capitalism and it doesn’t great (nothing is perfect though). What I don’t like is the attitude of people that look down upon people who don’t want to become SUPER successful. I could make 50% more income if I went for it and I feel that’s the expectations people have of me but I know that 50% comes with far more pressure and far more time needed to invest in the job— but I want enjoy life, not work to just work of live. I hit the level where I’m comfortable for myself financially but where I’m getting the peak of what I’m willing to deal with in stress

43:20 “words acquire positive or negative connotations over time”. The word “molest” is a great example. In Spanish it still means the the same as it use to in English— “to bother or annoy”. Today, in English, it has a negative sexual connotation.

5:18 tavern style pizza is “Chicago thin pizza” and much more consumed than Chicago Deep Dish. It’s thicker NY style but thinner than a regular pan pizza such as they serve at Pizza Hut. Deep dish or Chicago stuffed are sort of a thicker version of pan pizza

Adam, one of the biggest reasons I like your content (especially non food parts of your videos) is you are like me in your opinions and thoughts. You are what I describe as a practical progressive. Stick to facts, don’t be too ideological at the cost of obtaining a progressive goal, etc. I bring it up because your pause after you mentioned you wish they named the streets after some scientist who aren’t white men reminded me of your views that were discussed in more detail in the podcast

@MrAlbinoGhost that’s a great example. One other example I’m familiar is with YouTuber Nicki from Russia. The Russian invasion of Ukraine made him change his channel and now he lives abroad. He now does a mix of his travel and at least a monthly video on Russia and the war — often showing how the Russian state media is covering the war.

Detroit style pizza is my favorite US type of pizza! It’s like deep dish chicago but replace all that red sauce with bread! They have something similar in Rome! My favorite is still the Naples style pizza

Adam, I know you want to do more than just food videos. I like this video and would be happy to see some videos about YouTube TikTok IG and interesting stories involving those platforms. Examples are how creators make money, the positives and negatives of each in how it effects what the creator does, etc

@junkmail2223 it’s funny you mention Ethan Chlebowski did a video on it but don’t mention his findings. For those they won’t to know, Ethan found out that bay leaves most certainly work on certain food. Stocks and rice dishes showers noticeable improvement with nah leaves.

@pennyfarting first time I went to buffalo and even Syracuse, I felt it was exactly like Cleveland and Cincinnati. And while I’m at at, Ontario felt a lot like Great Lakes Midwest as well. Toronto was like Chicago and Ontario like like Illinois.

@jasonreed7522 the Midwest was the Midwest until the US grew all the way to the coast. There are two parts to the Midwest - Great Lakes region and the rest (mostly Great Plains).

I always thought the Best would be one podcast a week and one video a week alternating between cooking and history/science. Still, that’s two content per week is a lot. Two videos AND a podcast per week is a lot unless you hire a team.

@mars7304 I think you 100% hit the nail on the head. I often feel like I really understand a situation but can't put it in writing -- then you wrote exactly what I was trying to convey. There are few things in science that are near 100% true. There are often conditions (under these conditions...) or a probability that isn't 100%. if something is believed to be true with 95% certain, I'm going to with that. But if it weren't for the right wingers going crazy, I would keep in mind that it's 95% certain and not 100% leaving room for some minor doubt. When one side starts acting dishonestly and hunkers down on positions that would be the minority (the 5% instead of the 95% ), it causes the other side to also dig in more than they otherwise would have. It's a whole mess that goes well beyond just science. It affects so much of politics. Just 'facts' about anything. This is where people spreading conspiracy theories come from. It's the idea that the facts don't matter but you will believe what you want to believe. So something non-science related, let's say Trump did X and there is 90% certainty he did it and Biden did Y but only 10% certainty he did that. Many right wingers will assume Trump is innocent of X because of that 10% possibility (they wont' even consider there's a chance he's guilty) and will assume Biden is guilty despite 90% chance he's not. Same is happening with vaccines. There is that tiny chance that something bad might happen and they decide that the tiny change of that bad things means that vaccines don't work and are dangerous. I honestly don't know if things will ever improve. The more that the right goes to the right and becomes ideological, the more the left is doing it as well. I get called right winger by the far left and I get called a socialist by the right wing. In reality, I'm very progressive socially and moderate left fiscally. I use to be very left fiscally but then went and got my MBA and had time in the work environment and started to realize my economic beliefs before we mostly based on wishful thinking. I became moderate to even moderate right on fiscal issues -- but the right went insane in the past 10 years and either I shifted more left as a response or I stayed the same but the moderate right moved to my right. Or both. My point being is that I was more flexible and now I feel I'm hunkering down on positions that should have more flexibility.
